2 or 3 small hot fresh red and/or green chillies Soy sauce Thai Fish Sauce (Nam Pla)
Step One: Finely chop the chillies, deseeding if necessary.
Step Two: Add the soy and fish sauce.
Step Three: Serve at once or leave to marinate overnight.
